As Urban Chestnut Brewing Company's Director of Restaurant Operations, Andrew designed the menu by putting a modern twist on beloved German dishes. His passion for old world techniques and sustainable cooking also permeates most of his culinary decisions. Encouraging team initiatives such as starting an onsite urban garden and rooftop beekeeping operation has allowed for continuing to incorporate ingredients close to home. With a background consisting mainly of wine when joining Urban Chestnut, Andrew brought the same level of care cultivated from his training in Tuscany to the kitchen, often incorporating UCBC beer into the food menu. His latest fascination (or more accurately, obsession) is bread, which he has found an outlet for in perfecting the pizza dough recipe at The U.R.B., Urban Chestnut's Urban Research Brewery.
